I have a question if i am to cover a cake drum how far in advance can I do this?
Hey Coral, you can do this at least 4days in advance. I always tell bakers you don’t have to do everything in one day, this just leaves you stressed and flustered. It’s completely fine to spread out the process. Bake, cool sponges and wrap them in cling film once completely cooled (this locks in the moisture) then put in the refrigerator over night so that they firm up and are easier to decorate on. The next day crumb coat, this also locks in the moisture and keeps your sponges nice and fresh. Now you have the option to put the crumb coated cake in the refrigerator until the next day and then complete your cake or you can pop the crumb coated cake in the refrigerator for at least 3 hours and then decorate xx
